A new collaboration between leading food companies and research partners aims to accelerate this shift using data and artificial intelligence.
Together with Unilever, Bel Group, Cosun, NIZO and Vivici, Sproutfull is contributing to the PREDICT project, an initiative under the Next Food Collective.
Sustainable food production is highly dependent on formulation choices. However, improving environmental performance by changing ingredients often leads to unintended consequences in taste, texture, and structure, key factors that determine whether consumers accept a product.
The PREDICT consortium addresses this challenge by developing an advanced AI model capable of predicting how ingredients interact during processing, and how these interactions influence the final product structure. This enables food technologists to design more sustainable products without compromising on quality.
Within the project, Sproutfull contributes by bringing in its expertise in environmental impact assessment and data integration across the food supply chain. The company develops software that enables food producers to measure, manage, and reduce their environmental footprint by translating complex supply chain data into clear sustainability insights.
By integrating these insights into the formulation process, sustainability becomes a measurable and actionable parameter from the earliest stages of product development rather than an afterthought.
By combining expertise in food science, AI modeling, and environmental impact assessment, the PREDICT project contributes to the broader ambition of achieving climate-neutral food systems in line with Europe’s 2050 goals.

Sproutfull werkt samen met industriepartners aan AI-tool voor duurzamere voedselontwikkeling
De overgang naar een duurzamer voedselsysteem vraagt om meer dan alleen nieuwe ingrediënten. Het vraagt om een fundamenteel andere manier van kijken naar hoe voedingsproducten worden ontwikkeld en samengesteld.
Om die transitie te versnellen, werkt Sproutfull samen met toonaangevende partijen zoals Unilever, Bel Group, Cosun, NIZO en Vivici binnen het PREDICT-project, een initiatief van het Next Food Collective. Het project zet in op de combinatie van data, kunstmatige intelligentie en voedselwetenschap om duurzame voedselinnovatie sneller en effectiever mogelijk te maken.
Duurzame voedselproductie wordt sterk beïnvloed door keuzes in productformulering. Het vervangen van ingrediënten door duurzamere alternatieven kan de milieu-impact verlagen, maar heeft vaak ook invloed op smaak, textuur en structuur, juist de eigenschappen die bepalend zijn voor consumentacceptatie.
Het PREDICT-consortium wil dit probleem aanpakken met een geavanceerd AI-model dat voorspelt hoe ingrediënten zich tijdens verwerking gedragen en hoe zij de uiteindelijke producteigenschappen beïnvloeden. Daarmee kunnen productontwikkelaars duurzamere voedingsproducten ontwerpen zonder concessies te doen aan kwaliteit.
Binnen dit project levert Sproutfull expertise op het gebied van milieueffectanalyse en datakoppeling binnen de voedselketen. Het bedrijf helpt bij het inzichtelijk maken van de duurzaamheidsimpact van ingrediënten en ondersteunt de integratie van deze inzichten in het bredere innovatieproces.
Met zijn software helpt Sproutfull voedselproducenten om complexe ketendata te vertalen naar bruikbare duurzaamheidsinzichten, zodat ecologische impact al vroeg in productontwikkeling kan worden meegenomen.
Door voedselwetenschap, AI en duurzaamheidsanalyse te combineren, draagt het PREDICT-project bij aan de bredere Europese ambitie om klimaatneutrale voedselsystemen te realiseren richting 2050.
